Nicosia's Passuluna Bianco is a captivating expression of Sicilian winemaking that pays homage to the ancient tradition of 'appassimento'—the partial drying of grapes to concentrate their sugars, aromas, and flavors. The name 'Passuluna' beautifully marries 'passula' (the Sicilian dialect word for raisin) with 'luna' (the moon), evoking images of grapes slowly drying under the warm Mediterranean sun and cooling under the nocturnal sky. Crafted from select white varieties indigenous to Sicily, a portion of the grapes undergoes a delicate drying process before fermentation. This technique yields a wine of remarkable golden color, boasting an intense bouquet of ripe tropical fruits, candied citrus, and delicate honeyed notes, all balanced by a vibrant, refreshing acidity born from Sicily's sun-drenched, mineral-rich soils.

Cantine Nicosia er en historisk siciliansk vingård, grundlagt i 1898 af Francesco Nicosia og beliggende på Etnas østlige skråninger i Trecastagni. Gennem fem generationer i familiens eje har vinhuset etableret sig som en passioneret ambassadør for Siciliens vulkanske terroir og oprindelige druesorter – altid med fokus på certificeret økologisk vindyrkning og moderne, bæredygtig vinfremstilling.
