By harvesting the grapes early in the cool morning hours, they preserve the bright natural acidity and delicate aromatics of the fruit. The wine undergoes a brief cold maceration to achieve its delicate pale pink hue, followed by temperature-controlled fermentation in stainless steel tanks.
