Winemaker Christopher Tracy coaxes this lively sparkling white wine by bottling it before the primary fermentation is complete, trapping the natural carbon dioxide to create a soft, persistent effervescence. Unfiltered and unfined, the wine remains on its primary lees, presenting a cloudy, texturally intriguing profile. The maritime influence of the nearby Atlantic Ocean and Peconic Bay infuses the grapes with a bright, saline acidity and fresh mineral character.
