The 'Vigne de l'Hôpital de Dijon' refers to historical vineyard plots bequeathed to the city's local hospital over the centuries. This specific bottling pays tribute to Henri Darcy, the legendary 19th-century hydraulic engineer from Dijon who developed Darcy's Law and revolutionized the city's clean water system. Sourced from these historic municipal slopes at the northern edge of the Côte de Nuits, the wine is crafted with traditional Burgundian methods. It undergoes fermentation in temperature-controlled vats followed by aging in French oak casks, resulting in a Pinot Noir that beautifully balances bright red berry fruit, earthy complexity, and a refined mineral backbone reflective of the local limestone soils.
