While the region is globally famed for Shiraz, this Cabernet Sauvignon showcases the cooler sub-regions of the Barossa, where the grape develops its signature structure and aromatic complexity. The name 'Noble Baron' honors the visionary pioneers who established the Barossa's wine industry and built the majestic bluestone chateau in 1890. Crafted using traditional basket presses and open fermenters, the wine is aged in premium French oak barrels. This meticulous process coaxes out classic notes of cassis, dark plum, and subtle eucalyptus, backed by a firm, age-worthy tannic spine and a refined, lingering finish.
