Most famous of these is the continued use of traditional copper worm tubs—coiled pipes submerged in cold water tanks—to condense the spirit. This rapid cooling limits copper contact, leaving a heavy, sulfurous, and savory character in the new-make spirit. When matured in a single ex-bourbon barrel, such as Cask No 800584, this robust, meaty spirit undergoes a beautiful transformation.
