Craigellachie is often whispered about among whisky connoisseurs as the defiant rebel of Speyside, standing in stark, muscular contrast to its sweeter, gentler neighbors. Established in 1891 during the late-Victorian whisky boom by Peter Mackie and Alexander Edward, the distillery has stubbornly clung to traditional production methods. Most famous of these is the continued use of traditional copper worm tubs—coiled pipes submerged in cold water tanks—to condense the spirit. This rapid cooling limits copper contact, leaving a heavy, sulfurous, and savory character in the new-make spirit. When matured in a single ex-bourbon barrel, such as Cask No 800584, this robust, meaty spirit undergoes a beautiful transformation. The active American oak softens the spirit's wilder edges, introducing luscious layers of vanilla, toasted coconut, and bright orchard fruits, while preserving the thick, oily texture and signature waxy complexity that makes Craigellachie so distinctive.
