This rapid cooling limits copper contact, preserving heavy, sulfurous compounds that give the spirit its signature muscular, meaty, and savory texture. When matured in a single hogshead cask, the robust spirit undergoes a slow, transformative maturation, where the aggressive sulfur notes mellow into complex layers of charred pineapple, cordite, and toasted oak. This single cask expression represents an unadulterated snapshot of Craigellachie's old-school, uncompromising heritage.
