The Amaranthine Shiraz represents a focused expression of McLaren Vale's ancient soils and exceptional microclimates. Named after the mythical, unfading amaranth flower, this wine is crafted to capture an everlasting intensity of flavor and structure. Sourced from select low-yielding vineyards, the fruit undergoes traditional fermentation in open fermenters before being gently pressed. The resulting wine is matured in a combination of new and older French and American oak barriques. This process coaxes out a deep, complex profile defined by dark plum, blackberry, exotic spices, and a distinctive earthy minerality, embodying the rugged beauty and timelessness of the South Australian landscape.
