Named with the characteristic eccentricity of fourth-generation winemaker Chester Osborn, 'The Feathered Dinosaur' pays homage to the evolutionary link between prehistoric giants and modern birds, drawing a parallel to how the ancient, complex soils of McLaren Vale shape this contemporary Cabernet Sauvignon. Sourced from low-yielding vineyards, the grapes undergo traditional winemaking practices that have defined d'Arenberg for over a century: gentle foot-treading, fermentation in small open wax-lined concrete fermenters, and basket pressing. The wine is then matured in a mixture of new and older French oak barriques. The result is a classic McLaren Vale Cabernet, boasting a rich structure of dark cassis, leafy tobacco, and minty undertones, framed by muscular yet fine-grained tannins.
