The whimsical name is a playful nod to the sticky, muddy state of the botrytized grapes during harvest and pressing, which resembles a childhood mud pie but yields a liquid gold of incredible complexity. This sweet white wine is typically crafted from a blend of Viognier and Pinot Gris, which are left on the vines to develop Botrytis cinerea. The fungus shrivels the berries, concentrating the natural sugars, acids, and flavors. The resulting juice is fermented and aged to strike a perfect balance between decadent sweetness and vibrant, refreshing acidity, showcasing notes of dried apricots, honey, ginger, and citrus peel.
