The whimsical name is a playful nod to the sticky, muddy state of the botrytized grapes during harvest and pressing, which resembles a childhood mud pie but yields a liquid gold of incredible complexity. This sweet white wine is typically crafted from a blend of Viognier and Pinot Gris, which are left on the vines to develop Botrytis cinerea. The fungus shrivels the berries, concentrating the natural sugars, acids, and flavors.
