The name 'Saint-Esprit' pays homage to the sacred history of the Rhône Valley, where monastic orders historically tended the vines. Crafted primarily from grapes sourced from the right bank of the Rhône, the wine benefits from a diverse mosaic of terroirs, including granite-infused soils and alluvial deposits. To preserve the natural freshness, delicate aromatics, and crisp acidity of the grapes, Delas vinifies this cuvée entirely in temperature-controlled stainless steel vats, avoiding malolactic fermentation.
