The Bollenberg hill is one of Alsace's most legendary terroirs, steeped in local folklore and historical tales of witches' sabbaths, marked by the iconic chapel of Sainte-Apolline that stands sentinel over the vines. Characterized by its iron-rich clay-limestone soils and an exceptionally warm, dry microclimate that supports rare Mediterranean flora, this lieu-dit provides an exceptional home for Riesling. Domaine Dirler-Cadé cultivates their Bollenberg parcels using strict biodynamic principles, including horse-drawn plowing to protect the delicate soil structure. The resulting wine is a pure, terroir-driven expression of Riesling, balancing vibrant citrus and white flower aromas with a deep, chalky minerality and a saline, precise finish characteristic of its limestone foundations.

Established in 1871 by Jean Dirler in the village of Bergholtz, Domaine Dirler-Cadé is a pioneering force in Alsace's biodynamic wine movement. Now run by the fifth generation, Jean-Christophe Dirler and his wife Ludivine Cadé, the estate expanded in 1998 through the union of their family vineyards. The domaine is deeply committed to ecological balance, achieving full biodynamic certification and utilizing traditional horse-drawn plowing to preserve the soils of their prestigious Grand Cru plots, including Kessler, Spiegel, Saering, and Kitterlé.
