Dom Pérignon's Plénitude 2 (P2) represents the second life of a vintage, capturing a moment of peak energy, precision, and expansion. While the initial release (P1) of a vintage occurs after approximately nine years on the lees, a portion of the bottles is held back in the chalk cellars of Épernay to mature further. Undergoing at least 15 years of slow, active maturation on its yeast sediment, the wine undergoes a profound transformation. This extended autolysis imbues the Champagne with a majestic complexity, a creamy, tactile mouthfeel, and a paradoxical, piercing freshness. The concept of the Plénitudes is a testament to the house's mastery of time, showcasing how a single vintage can express entirely different facets of its personality over decades.
