Dom Pérignon's 'P3' represents the third 'Plénitude'—the absolute pinnacle of the house's late-disgorged Champagne program. While the first release (P1) occurs after around nine years, and the second (P2) after fifteen, the P3 cuvées are held in the cellars on their lees for a minimum of 25 to 30 years. This extended maturation under the watchful eye of the Chef de Cave allows the wine to enter a state of complete integration and complexity, where the primary fruit has completely fused with deep, tertiary notes of brioche, smoke, and truffle. The concept of Plénitudes is rooted in the belief that Dom Pérignon does not develop in a linear fashion, but rather in successive leaps.
