This Bourgogne Blanc is crafted from Chardonnay vines grown on clay-limestone soils, often situated near the prestigious borders of Meursault. Boillot's low-intervention philosophy shines through in the cellar, where gentle pressing, indigenous yeast fermentation, and careful aging in French oak barrels with minimal new oak yield a white Burgundy of remarkable purity. The wine beautifully balances the natural richness of the grape with a vibrant, mineral-driven tension, reflecting the storied heritage of the Boillot family and their commitment to expressing the true voice of the terroir.

Domaine Louis Boillot blev grundlagt i begyndelsen af 2000'erne, da Louis Boillot videreførte sin families mangeårige vinbønderarv fra Volnay og etablerede sit eget domæne i Chambolle-Musigny sammen med sin partner, den anerkendte vinmager Ghislaine Barthod. Domænet råder over en imponerende samling af usædvanligt gamle vinstokke fordelt over både Côte de Nuits og Côte de Beaune, herunder prestigefyldte parceller i Chambolle-Musigny, Gevrey-Chambertin, Volnay og Pommard. Med omhyggeligt markarbejde og en minimalistisk tilgang i kælderen lægger Boillot vægt på nænsom ekstraktion og afstemt fadlagring, så hvert enkelt terroirs særpræg træder tydeligt frem.
