Domaine Louis Boillot's regional Rouge is a masterclass in Burgundy craftsmanship, punching far above its humble classification. This wine is crafted from old Pinot Noir vines split between the Côte de Beaune and the Côte de Nuits. This dual-terroir sourcing is highly unusual and provides a beautiful synergy: the parcels near Volnay contribute silky, floral elegance and bright red fruit, while the parcels near Gevrey-Chambertin inject structure, earthy depth, and dark spice. Boillot's traditional, low-intervention approach—employing destemmed fruit, gentle extraction, and aging in older French oak barrels—allows this diverse terroir to speak clearly, resulting in a remarkably complex, pure, and vibrant expression of Burgundy.

Domaine Louis Boillot was established in 2002 when Louis Boillot parted ways with his brother Pierre at their family estate, Domaine Lucien Boillot in Gevrey-Chambertin. Relocating to Chambolle-Musigny alongside his partner, esteemed vigneronne Ghislaine Barthod, Louis established cellars that benefit from four generations of ancestral holdings across premier terroirs in both the Côte de Beaune and Côte de Nuits. Today, Louis and his son Clément meticulously tend an extraordinary collection of old vines—frequently exceeding 50 to nearly 100 years of age—rooted in complex jurassic limestone, stony marl, and clay. Viticulture adheres strictly to organic principles and lutte raisonnée, eliminating synthetic chemicals and emphasizing rigorous ploughing. Winemaking is classical and restrained, favoring complete destemming, cool pre-fermentation macerations, gentle extractions, and minimal new oak maturation (typically under 30%).
