β¨ Technical Specifications
Domaine Louis Boillot's Vieilles Vignes red expressions showcase the profound depth and concentration that can only be achieved from ancient, deeply rooted Pinot Noir vines. Sourced from meticulously tended old-vine parcels, some of which were planted over half a century ago, this wine represents a masterclass in patience and heritage. Boillot's philosophy centers on minimal intervention, allowing the naturally low yields of these old vines to translate into a structurally elegant wine. The winemaking process involves gentle destemming, a cool pre-fermentation maceration, and aging in French oak barrels with a very judicious use of new oak. This traditional approach honors the historic Burgundian heritage, preserving the bright, mineral-infused red fruit character and offering a pure, vibrant, and remarkably complex expression of the terroir.
πΎ About the Producer
Domaine Louis Boillot was established in the early 2000s when vigneron Louis Boillot, continuing a multi-generational family winemaking legacy originally rooted in Volnay, established his operations in Chambolle-Musigny alongside his partner, acclaimed winemaker Ghislaine Barthod. The domaine commands an enviable collection of exceptionally old vines spanning both the CΓ΄te de Nuits and the CΓ΄te de Beaune, encompassing prestigious parcels in Chambolle-Musigny, Gevrey-Chambertin, Volnay, and Pommard. Employing meticulous vineyard management and non-interventionist cellar practices, Boillot focuses on gentle extraction and balanced oak maturation to let each distinct terroir shine. The resulting Pinot Noir and Chardonnay bottlings are renowned for their aromatic purity, velvety textures, and quintessential Burgundian finesse.
