Sourced from meticulously tended old-vine parcels, some of which were planted over half a century ago, this wine represents a masterclass in patience and heritage. Boillot's philosophy centers on minimal intervention, allowing the naturally low yields of these old vines to translate into a structurally elegant wine. The winemaking process involves gentle destemming, a cool pre-fermentation maceration, and aging in French oak barrels with a very judicious use of new oak. This traditional approach honors the historic Burgundian heritage, preserving the bright, mineral-infused red fruit character and offering a pure, vibrant, and remarkably complex expression of the terroir.

Domaine Louis Boillot blev grundlagt i begyndelsen af 2000'erne, da Louis Boillot videreførte sin families mangeårige vinbønderarv fra Volnay og etablerede sit eget domæne i Chambolle-Musigny sammen med sin partner, den anerkendte vinmager Ghislaine Barthod. Domænet råder over en imponerende samling af usædvanligt gamle vinstokke fordelt over både Côte de Nuits og Côte de Beaune, herunder prestigefyldte parceller i Chambolle-Musigny, Gevrey-Chambertin, Volnay og Pommard. Med omhyggeligt markarbejde og en minimalistisk tilgang i kælderen lægger Boillot vægt på nænsom ekstraktion og afstemt fadlagring, så hvert enkelt terroirs særpræg træder tydeligt frem.
