Domaine Louis Boillot's Meursault 'Les Vireuils' is a masterclass in high-altitude, mineral-driven Burgundy. Situated on the upper slopes of Meursault bordering Auxey-Duresses, the 'Les Vireuils' lieu-dit is defined by its thin, stony soils over hard limestone bedrock and its exposure to cool breezes. This unique microclimate yields a wine that departs from the historically heavy, buttery stereotype of Meursault, offering instead a tense, chiseled, and highly aromatic profile. Boillot's meticulous, low-intervention winemaking—utilizing gentle pressing and judicious oak aging—allows the pristine, chalky energy of this terroir to shine. Historically, the high-slope vineyards of Meursault were once overlooked in favor of the richer mid-slope clay soils, but in an era of warming climates, 'Les Vireuils' has emerged as a highly coveted site for its ability to preserve vibrant acidity and crystalline purity.

Domaine Louis Boillot blev grundlagt i begyndelsen af 2000'erne, da Louis Boillot videreførte sin families mangeårige vinbønderarv fra Volnay og etablerede sit eget domæne i Chambolle-Musigny sammen med sin partner, den anerkendte vinmager Ghislaine Barthod. Domænet råder over en imponerende samling af usædvanligt gamle vinstokke fordelt over både Côte de Nuits og Côte de Beaune, herunder prestigefyldte parceller i Chambolle-Musigny, Gevrey-Chambertin, Volnay og Pommard. Med omhyggeligt markarbejde og en minimalistisk tilgang i kælderen lægger Boillot vægt på nænsom ekstraktion og afstemt fadlagring, så hvert enkelt terroirs særpræg træder tydeligt frem. Resultatet er Pinot Noir- og Chardonnay-vine, der er berømte for deres aromatiske renhed, fløjlsbløde tekstur og klassiske burgundiske elegance.
