Domaine Ponsot's approach to white winemaking is as iconoclastic and legendary as its red wine heritage. While Burgundy is synonymous with Chardonnay aged in toasted new oak, Ponsot famously charts its own course. Whether crafting their rare Bourgogne Blanc or their historic Aligoté-based Clos des Monts Luisants, the domaine eschews new oak entirely, opting instead for very old, neutral barrels. This traditional philosophy preserves the absolute purity of the fruit and the intense, stony minerality of the Côte de Nuits soils. Vinified with natural yeasts, no temperature control, and minimal sulfur, these whites develop a rich, textured palate, vibrant acidity, and an extraordinary capacity for aging that defies conventional white Burgundy expectations.

Domaine Ponsot blev grundlagt i 1872 af William Ponsot og er en legendarisk ejendom med base i Morey-Saint-Denis i hjertet af Côte de Nuits i Bourgogne. Domænet er kendt for sin uafhængighed og pionerånd; det var således blandt de allerførste i regionen, der tappede vinene på eget domæne i 1930'erne og gik forrest inden for klonselektion. Vingården arbejder ud fra et princip om minimal intervention med lavt udbytte fra ældgamle vinstokke, sen høst for at sikre optimal fysiologisk modenhed og lagring på brugte, neutrale egetræsfade for at bevare terroirets renhed. Domaine Ponsot er verdensberømt for sine majestætiske og exceptionelt lagringsdygtige Pinot Noir-vine fra Grand Crus som Clos de la Roche og Clos Saint-Denis samt den helt unikke, historiske Morey-Saint-Denis Premier Cru Clos des Monts Luisants, som er skabt på gamle Aligoté-stokke.
