An intriguing anomaly in the heart of the Côte de Nuits, Domaine Ponsot's 'Bulles Luisantes' is a rare sparkling gem born from the estate's historic Clos des Monts Luisants vineyard in Morey-Saint-Denis. While Burgundy is synonymous with Chardonnay and Pinot Noir, the Ponsot family has long championed the Aligoté grape, famously maintaining ancient Aligoté vines high up the slope. 'Bulles Luisantes' (translating to 'shining bubbles') is produced using the traditional method, capturing the vibrant, high-acid energy of Aligoté with the texturing influence of old vines and Ponsot's minimalist, non-interventionist cellar philosophy. It represents a whimsical yet deeply serious expression of Burgundian heritage, offering a sparkling alternative that honors the unique terroir of Monts Luisants.

Domaine Ponsot blev grundlagt i 1872 af William Ponsot efter hans hjemkomst fra Den Fransk-Tyske Krig, og ejendommen regnes i dag blandt de mest traditionsrige og kompromisløst egenrådige i Morey-Saint-Denis. Under Hippolyte Ponsot markerede domænet sig i 1930'erne som en af pionererne inden for aftapning på eget domæne, ligesom han spillede en afgørende rolle i etableringen af det bourgogniske Appellation d'Origine Contrôlée-system. Siden Laurent Ponsots afgang i 2017 videreføres vingården under ledelse af Rose-Marie Ponsot sammen med vinmager Alexandre Abel. Markarbejdet hviler på stringente biologiske og non-interventionistiske principper på tværs af de historiske terroirs, der er præget af kalksten fra Bathonien og Bajocien dækket af fossilrig mergel. I kælderen forenes tradition med kompromisløs præcision: et yderst behersket svovlregime, gæring på åbne trækar samt modning på neutrale egetræsfade helt uden brug af nyt træ.
