Domaine Ponsot has a whimsical and historic tradition of naming many of its cuvées after the native birds and fauna that inhabit the Burgundian countryside. The 'Cuvée de la Fauvette'—named after the elegant garden warbler—is a Premier Cru that beautifully captures the delicate, ethereal spirit of Chambolle-Musigny. True to the estate's uncompromising philosophy, this wine is crafted with minimal intervention: vinified without sulfur additions, fermented in ancient oak vats, and aged entirely in seasoned, neutral barrels. By eschewing new oak, Ponsot allows the pure, high-toned red fruit, limestone minerality, and haunting floral perfume of the terroir to express themselves without cosmetic wood influence. The result is a Pinot Noir of supreme grace, boasting silky tannins, vibrant acidity, and a deep, complex finish.

Domaine Ponsot blev grundlagt i 1872 af William Ponsot og er en legendarisk ejendom med base i Morey-Saint-Denis i hjertet af Côte de Nuits i Bourgogne. Domænet er kendt for sin uafhængighed og pionerånd; det var således blandt de allerførste i regionen, der tappede vinene på eget domæne i 1930'erne og gik forrest inden for klonselektion.
