Remarkably long-lived; typically best enjoyed 10 to 30+ years from the vintage, though it can evolve beautifully for even longer under ideal cellar conditions.

Pungent blue cheeses such as Roquefort, fruit-based tarts and desserts like apple tarte tatin, or enjoyed on its own as a meditative digestif.

The Wehlener Sonnenuhr, or 'Sundial of Wehlen,' is one of the Mosel's most iconic vineyards, named after the historic sundial erected in 1842 by Jodocus Prüm to guide vineyard workers. Dr. Loosen's Eiswein from this legendary site is a rare, high-stakes masterpiece. Crafted from 100% Riesling grapes left on the vine until they freeze solid—requiring temperatures of at least -7°C (19°F)—the grapes are harvested in the freezing dark of early morning and pressed immediately. This process leaves the water behind as ice, yielding a highly concentrated, nectar-like juice. The steep, blue Devonian slate soils of the Sonnenuhr infuse the wine with a distinct stony minerality, balancing the luscious sweetness with a piercing, vibrant acidity that prevents it from ever feeling heavy.

The historic Dr. Loosen estate, located in Bernkastel-Kues in the Mosel region of Germany, has been in the same family for over two centuries. Since taking ownership in 1988, Ernst Loosen has propelled the winery to international acclaim by focusing on the estate's extraordinary heritage of ungrafted, old Riesling vines—some over 120 years old—situated in historic grand cru sites such as Erdener Pr$lat, $rziger W$rzgarten, and Bernkasteler Lay. The winery's philosophy centers on minimalist winemaking and a deep respect for the region's diverse slate soils, which yield intensely mineral-driven, expressive wines. Dr. Loosen is globally renowned for its precise, elegant Rieslings, spanning from dry (Trocken) styles to exquisitely concentrated sweet expressions like Auslese, Beerenauslese, and rare Eisweins.
