Egon Müller's Scharzhofberger Riesling Eiswein is the stuff of wine lore—a high-stakes gamble against nature. To produce Eiswein, grapes must freeze naturally on the vine and be harvested in the freezing darkness of early morning at temperatures of -7 degrees Celsius or colder. Pressed immediately while still frozen, the ice crystals remain in the press, leaving behind a tiny quantity of incredibly concentrated, nectar-like juice.
