✨ Technical Specifications
Emiliana's 'Novas' range pays homage to the ancient astronomers who observed 'new stars' (novae) in the night sky, mirroring the winery's own journey of discovery in organic and biodynamic viticulture. Sourced from the cool-climate Casablanca Valley within the greater Aconcagua region, this Gran Reserva Viognier thrives under the cooling influence of the Pacific Ocean and morning fogs. The grapes are carefully harvested to retain natural acidity. Vinification typically involves fermentation in stainless steel tanks to preserve the grape's intense aromatic profile of stone fruits and white flowers, with a small portion aged on its fine lees to impart a subtle, creamy texture and enhanced complexity.
🍾 About the Producer
Founded in 1986 by the Guilisasti family, Emiliana has grown to become the world's leading producer of organic and biodynamic wines. In the late 1990s, visionary director Rafael Guilisasti partnered with renowned consulting winemaker Álvaro Espinoza to pioneer ecological viticulture across Chile's most prestigious wine regions, including the Casablanca, Maipo, Colchagua, and Cachapoal Valleys. Guided by Demeter-certified biodynamic farming principles, Emiliana eliminates synthetic inputs in favor of natural preparations and native biodiversity to authentically reflect terroir. The estate is widely celebrated for its flagship biodynamic red blends, notably Coyam and Gê, as well as expressive single-vineyard expressions of Carmenère, Cabernet Sauvignon, and Syrah.
