Grown in the Borgo Guarini estate in the Trapani countryside, this wine benefits from a unique microclimate where significant diurnal temperature shifts preserve the grape's natural acidity and intense aromatic profile. Grillo, a historic Sicilian variety once primarily used for Marsala, finds a modern, vibrant expression here. The grapes are harvested by hand and soft-pressed, followed by fermentation in temperature-controlled stainless steel tanks and brief aging on the lees to enhance complexity and mouthfeel while preserving the pristine fruit character.
