Firriato's Caeles Syrah is a testament to the estate's dedication to organic viticulture, with the name 'Caeles' deriving from the Latin word for 'heavenly' or 'celestial,' representing a clean, nature-respecting approach to winemaking. Sourced from certified organic vineyards in the Trapani countryside, particularly the Borgo Guarini estate, the grapes benefit from a microclimate with significant diurnal temperature shifts and clay-rich soils. This environment coaxes out the grape's signature spicy and dark-fruit characteristics. Fermented and aged primarily in stainless steel to preserve its vibrant fruit profile and varietal purity, this wine beautifully marries the historic agricultural traditions of western Sicily with modern ecological stewardship.

Firriato blev grundlagt i 1984 af Salvatore Di Gaetano og hans hustru Vinizia Novara og regnes i dag blandt Siciliens førende vinproducenter med stor anerkendelse for deres rolle i øens vinøse renæssance. Vingården råder over bemærkelsesværdigt varierede terroirs på tværs af Sicilien – fra Trapani-landskabets solbeskinnede vinmarker og øen Favignanas maritime klima til Etnas højtbeliggende, vulkanske skråninger.
