Favinia Passulè is a rare and poetic sweet wine born from Firriato's heroic viticulture project on the island of Favignana, the largest of the Egadi Islands off the western coast of Sicily. Cultivated at Tenuta Calamoni, the only vineyard on the island, the Zibibbo vines grow just meters from the Mediterranean Sea, rooted in soils rich in calcarenite (fossil-rich marine limestone) and sand. The grapes are harvested and naturally dried under the intense Sicilian sun, concentrating their sugars, aromatics, and saline character. This passito style beautifully marries the intense, honeyed sweetness of dried stone fruits and orange blossom with a distinct, refreshing marine salinity driven by the constant sea breezes.
