Hailing from the high-altitude, volcanic slopes of Mount Etna, Firriato's Gaudensius Rosé is a sparkling masterpiece crafted using the traditional Metodo Classico. This elegant spumante is born in the Cavanera Etnea estate, where vines of Nerello Mascalese thrive in dark, mineral-rich volcanic soils. The unique microclimate, characterized by extreme diurnal temperature shifts, imparts a remarkable freshness and complexity to the grapes. After a gentle pressing and short skin contact to achieve its delicate pink hue, the wine undergoes secondary fermentation in the bottle, resting on its lees for at least 20 months. The result is a refined sparkling rosé that beautifully marries the wild berry and floral notes of Nerello Mascalese with the smoky, mineral undertones of its volcanic heritage, celebrating Sicily's modern renaissance in fine sparkling winemaking.

Firriato blev grundlagt i 1984 af Salvatore Di Gaetano og hans hustru Vinizia Novara og regnes i dag blandt Siciliens førende vinproducenter med stor anerkendelse for deres rolle i øens vinøse renæssance. Vingården råder over bemærkelsesværdigt varierede terroirs på tværs af Sicilien – fra Trapani-landskabets solbeskinnede vinmarker og øen Favignanas maritime klima til Etnas højtbeliggende, vulkanske skråninger. Firriato er dybt engageret i certificeret økologisk dyrkning og bæredygtighed, og de værner om den autentiske biodiversitet med fokus på oprindelige sicilianske druesorter som Nero d'Avola, Nerello Mascalese og Grillo suppleret med udvalgte internationale sorter.
