Firriato's exploration of traditional-method sparkling wine finds its ultimate expression in their Metodo Classico Pas Dosé, primarily associated with the high-altitude volcanic slopes of Mount Etna. Sourced from the Cavanera estate, where vines thrive in dark, mineral-rich volcanic soils at significant elevations, this cuvée represents the pinnacle of Sicilian mountain viticulture. The wine undergoes secondary fermentation in the bottle followed by extended aging on its lees. By opting for zero dosage (Pas Dosé), the winemakers present the grape's purest form, unadorned by added sugar. This results in a sparkling wine of remarkable tension, showcasing the intense salinity, flinty minerality, and razor-sharp acidity characteristic of Etna's unique terroir, balanced by delicate autolytic notes of toasted bread and citrus peel.
