Frédéric Cossard's 'Bedeau' is a legendary Bourgogne Rouge that captures the wild, energetic spirit of natural winemaking in Burgundy. The name 'Bedeau' historically refers to a church beadle, a subtle nod to the monastic heritage that shaped the vineyards of the region. Sourced from organically and biodynamically farmed Pinot Noir plots, this cuvée is crafted with Cossard's signature hands-off philosophy. The grapes undergo whole-cluster fermentation with indigenous yeasts in open vats, followed by aging in seasoned oak casks, entirely without the addition of sulfur. This non-interventionist approach yields a remarkably pure, vibrant, and living expression of Burgundy, characterized by bright red berry fruit, forest floor nuances, and a lively, mineral-driven finish.

Founded in 1996 by Frédéric Cossard in Saint-Romain, Domaine de Chassorney and the namesake Frédéric Cossard label have emerged as touchstones of Burgundy's natural wine movement.
