La Chassornade is Frédéric Cossard's vibrant and whimsical foray into the world of sparkling wine, crafted as a Pétillant Naturel (pét-nat) using the ancestral method. Sourced from organically farmed Aligoté vines in Burgundy, this cuvée bypasses the traditional Champagne method in favor of a single, continuous fermentation that finishes in the bottle, trapping the natural carbon dioxide. True to Cossard's non-interventionist philosophy, the wine is fermented with indigenous yeasts, undergoes no filtration, and is bottled entirely without added sulfur. The result is a delightfully cloudy, energetic sparkling white that captures the raw, joyful essence of the grape, offering a lively, textured palate marked by bright orchard fruits, citrus zest, and a distinct mineral backbone.
