Hailing from the high-altitude, wind-swept slopes of Saint-Romain in Burgundy, 'Les Chardonnereux' showcases Frédéric Cossard's masterful touch with natural winemaking. The name of the lieu-dit, 'Les Chardonnereux,' evokes the wild thistles and goldfinches that populate this rugged, limestone-rich terroir. In this cooler microclimate, Pinot Noir develops a remarkable tension, bright acidity, and a distinct mineral core. Cossard coaxes out the pure essence of this terroir through non-interventionist methods: whole-cluster fermentation using indigenous yeasts, long and gentle macerations without sulfur, and aging in neutral vessels. The resulting red wine is incredibly vibrant, energetic, and alive, offering a rustic yet highly elegant expression of Burgundy that eschews modern standardization in favor of raw, authentic character.

Founded in 1996 by Frédéric Cossard in Saint-Romain, Domaine de Chassorney and the namesake Frédéric Cossard label have emerged as touchstones of Burgundy's natural wine movement. Committed to uncompromising minimal intervention, Cossard practices organic and biodynamic viticulture, vinifying with indigenous yeasts and eschewing fining, filtration, and added sulfur. The estate is distinguished by its innovative aging vessels, balancing seasoned oak barrels with Georgian clay qvevris to preserve absolute varietal purity and terroir transparency.
