Crafted by the legendary natural winemaking pioneer Frédéric Cossard, 'Les Genevrières' Qvevris represents a fascinating dialogue between Burgundian terroir and ancient Georgian winemaking traditions. The grapes are sourced from the esteemed 'Les Genevrières' climat—a site historically named for the wild juniper bushes that once dotted the landscape. In the cellar, Cossard eschews traditional oak barrels in favor of Georgian qvevris (clay amphorae). The wine undergoes fermentation and extended aging in these clay vessels, entirely without added sulfur or temperature control. This ancient method allows for a slow, natural micro-oxygenation that preserves the crystalline purity of the fruit while imparting a remarkable, texturally complex, and deeply mineral character that redefines classic Burgundy.

Established in 1996 by Frédéric Cossard, a pioneer of natural winemaking, Domaine de Chassorney is nestled in the historic village of Saint-Romain within Burgundy, France. Operating both his estate and an acclaimed négociant label under his own name, Cossard is celebrated for his uncompromising commitment to organic and biodynamic farming. In the cellar, he practices a strict non-interventionist philosophy, fermenting with indigenous yeasts and bottling entirely without added sulfur.
