✨ Technical Specifications
Frédéric Cossard, the legendary Burgundy natural winemaker, ventures into the neighboring Jura region to source exceptional fruit for this cuvée. Crafted under his négociant label, this wine represents a brilliant bridge between Burgundian precision and Jura's wild, historic terroir. Rather than adopting the traditional oxidative 'sous-voile' (under a veil of yeast) style common to the Jura, Cossard vinifies this Savagnin in an 'ouillé' (topped-up) fashion. This non-oxidative method preserves the grape's electric acidity, intense mineral drive, and pure citrus and stone fruit character. Fermented with indigenous yeasts and bottled entirely without added sulfur, it is a vibrant, living testament to Cossard's non-interventionist mastery and the ancient heritage of the Savagnin grape.
🍾 About the Producer
Founded in 1996 by Frédéric Cossard in Saint-Romain, Domaine de Chassorney and the namesake Frédéric Cossard label have emerged as touchstones of Burgundy's natural wine movement. Committed to uncompromising minimal intervention, Cossard practices organic and biodynamic viticulture, vinifying with indigenous yeasts and eschewing fining, filtration, and added sulfur. The estate is distinguished by its innovative aging vessels, balancing seasoned oak barrels with Georgian clay qvevris to preserve absolute varietal purity and terroir transparency. Celebrated for exceptional cuvées across Burgundy, Beaujolais, and the Jura, the domaine crafts radiant expressions of Pinot Noir and Chardonnay such as Bedeau and Bigotes, alongside sought-after amphora-aged and experimental bottlings.
