Frédéric Cossard's Version Sud series represents his creative exploration outside his native Burgundy. Sourcing organically grown Grenache from trusted grower partners in the south of France, Cossard applies his signature non-interventionist, zero-sulfur winemaking techniques to warmer-climate fruit. The grapes are carefully harvested by hand and transported back to his cellar in Saint-Romain under temperature-controlled conditions to preserve their pristine freshness. Fermented with indigenous yeasts and utilizing whole-cluster maceration, this cuvée showcases a remarkably vibrant, juicy, and energetic side of Grenache, trading heavy extraction for pure, crunchy red fruit, wild garrigue herbs, and a bright, mineral-driven finish. It is a testament to Cossard's ability to translate his Burgundian finesse to the sun-drenched varieties of the south.

Founded in 1996 by Frédéric Cossard in Saint-Romain, Domaine de Chassorney and the namesake Frédéric Cossard label have emerged as touchstones of Burgundy's natural wine movement. Committed to uncompromising minimal intervention, Cossard practices organic and biodynamic viticulture, vinifying with indigenous yeasts and eschewing fining, filtration, and added sulfur. The estate is distinguished by its innovative aging vessels, balancing seasoned oak barrels with Georgian clay qvevris to preserve absolute varietal purity and terroir transparency.
