It is distilled from the pomace of Gaja's 'Sito Moresco' wine, which historically blends Nebbiolo, Merlot, and Cabernet Sauvignon. The name 'Sito Moresco' pays homage to the original owner of the historic vineyard plot in Barbaresco. To capture the pure, aromatic essence of these grapes, the fresh pomace is distilled in copper alembic stills under a vacuum-sealed system, a method that preserves the delicate, volatile aromas of the fruit. This produces a grappa of exceptional clarity, elegance, and complexity, reflecting both the innovative spirit of Angelo Gaja and the deep-rooted distilling traditions of the Langhe region.
