Gaja's Grappa Sperss is a masterfully crafted Italian distillate that carries the soul of Piedmont's legendary Langhe hills. The name 'Sperss' translates to 'nostalgia' in the local Piedmontese dialect, a poignant nod to Angelo Gaja's long-held dream of reclaiming his family's historical connection to the prized vineyards of Serralunga d'Alba, which they finally acquired in 1988. This grappa is distilled from the fresh, moisture-rich pomace of Nebbiolo grapes harvested from the iconic Sperss vineyard. Distilled using traditional copper alembic stills to preserve the delicate, volatile aromatics of the Nebbiolo grape, the spirit is then carefully aged in oak casks. This aging process imparts a beautiful amber hue and weaves complex layers of dried fruits, warm spices, hazelnut, and subtle vanilla into the robust, structured, and deeply expressive character of the Nebbiolo pomace.

Gaja blev grundlagt i Barbaresco i 1859 af Giovanni Gaja og regnes i dag blandt de mest indflydelsesrige dynastier i moderne italiensk vinhistorie. Vingårdens verdensberømmelse skyldes i høj grad fjerde generations ikoniske frontfigur, Angelo Gaja, som revolutionerede Piemonte ved at indføre temperaturstyret gæring, modning på franske barriques, grøn høst samt enkeltmarksaftapninger. Markarbejdet på Langhes klassiske kalkholdige mergeljord tager udgangspunkt i biodiversitet, sund jordbundsvitalitet og økologiske principper tilpasset klimaforandringerne, frem for rigide certificeringsordninger. Huset hyldes verden over for sine skoledannende Nebbiolo-vine – ikke mindst flagskibet Barbaresco DOCG samt de legendariske enkeltmarkscruer Sorì San Lorenzo, Sorì Tildìn og Costa Russi foruden Barolo-cruen Sperss. Ud over disse uovertrufne fortolkninger af Nebbiolo har familien også fornyet Piemontes hvidvine og klassiske Bordeaux-blends med banebrydende cuvéer som Gaia & Rey Chardonnay, Rossj-Bass og Darmagi. I dag drives vingården i tæt parløb mellem Angelo og hans tre børn Gaia, Rossana og Giovanni.
