Sourced from old-vine plots in the village of Brestovitsa within the western Thracian Lowlands, this cuvée highlights the Rubin variety—a 1944 Bulgarian crossing of Nebbiolo and Syrah. The vines thrive on calcareous clay and cinnamon forest soils situated at the foothills of the Rhodope Mountains, where warm days are balanced by significant diurnal cooling. Fermentation occurs spontaneously in stainless steel using indigenous yeasts, followed by gentle manual punch-downs to extract structural tannins without bitterness. The wine matures predominantly in used Bulgarian and neutral French oak barrels to preserve its dark floral character and bright, energetic core before bottling with minimal sulfur additions.

Established in 2014 by oenologists and university classmates Petar Georgiev and Radostin Milkov, this boutique atelier is at the forefront of Bulgaria's low-intervention wine renaissance. Returning home after vintages across Austria, Malta, New Zealand, China, and the United States, the pair deliberately eschewed estate ownership to partner directly with heritage growers across the Thracian Valley. They champion indigenous Bulgarian varieties sourced from venerable 40- to 50-year-old bush vines set on clay, sandy-deluvial, and cinnamon-forest soils. In the cellar, their philosophy prioritizes pure varietal typicity through hand harvesting, ambient or spontaneous fermentations, gentle extraction, and maturation in local Bulgarian and French oak without excessive manipulation. Their benchmark Rubin Brestovitsa Vineyard captures the hallmark depth of this 1944 Nebbiolo-Syrah cross, yielding fine-grained tannins, dark floral aromas, and vibrant freshness, epitomizing the duo's modern, terroir-driven reinterpretation of ancient Thracian viticulture.
