Domaine de Cigalus, nestled in the heart of the Languedoc, serves as the crown jewel of Gerard Bertrand's biodynamic crusade. Guided by the principles of Rudolf Steiner and the golden ratio, this estate was the pioneer for Bertrand's transition to holistic, Demeter-certified agriculture. The Cigalus Blanc is a masterful, unconventional blend of Chardonnay, Viognier, and Sauvignon Blanc, classified under the IGP designation to allow the winemaker the freedom to blend these distinct varieties. The grapes are harvested by hand at optimal ripeness, then gently pressed and fermented in French oak barrels, where they undergo regular lees stirring (batonnage) over several months. This meticulous process yields a wine of exceptional texture, marrying the opulent, tropical, and floral aromatics of Viognier with the structured, buttery depth of Chardonnay and the vibrant, citrusy lift of Sauvignon Blanc. It is a testament to Bertrand's vision of elevating Languedoc whites to the world stage.
