Crafted by the visionary Gérard Bertrand, a champion of ecological harmony in the South of France, the Pollinat Chardonnay is named in honor of the vital pollinators that sustain the vineyard's rich ecosystem. Sourced from the IGP Cévennes, where the rugged foothills of the Massif Central meet the Mediterranean influence, this wine benefits from a cooler microclimate. The dramatic diurnal temperature shifts of the Cévennes allow the Chardonnay grapes to develop complex aromatic profiles while retaining a vibrant, refreshing acidity. Vinified primarily in temperature-controlled stainless steel tanks to preserve its pure fruit expression, this cuvée beautifully reflects its clay-limestone terroir through a signature blend of crisp green apple, white floral notes, and a clean, mineral-driven finish.
