✨ wine.spec_sheet

Crafted to celebrate Jean-Marie Guffens' milestone 35th harvest, the '35e Vendange' is a monumental tribute to a lifetime of revolutionary winemaking in the Mâconnais. For decades, Guffens has defied traditional Burgundian hierarchies, proving that the limestone cliffs of Vergisson could yield whites of Grand Cru stature. This rare cuvée is assembled from his most historic, old-vine Chardonnay parcels, capturing the absolute essence of the estate's terroir. Vinified with Guffens' signature uncompromising approach—extremely low yields, wild yeast fermentation, and extended aging on the fine lees without battonage—the wine is a masterclass in tension. It balances opulent, concentrated stone fruit flavors with a searing, saline minerality and a structural precision that allows it to age magnificently.
