Crafted by the iconoclastic Jean-Marie Guffens, 'Juliette Toute Seule' is a legendary and rare cuvée that showcases the absolute pinnacle of what the Mâconnais can achieve. Named after Guffens's daughter, Juliette, this wine is produced only in select vintages when the exceptional Chardonnay fruit from the limestone-rich slopes of Mâcon-Pierreclos is deemed so singular and complete that it is bottled entirely on its own—hence 'Toute Seule' (all alone)—rather than being blended into the famous 'Juliette et les Vieilles' cuvée. Guffens employs his signature uncompromising methods: extremely low yields, pressing with horizontal plate presses to extract only the finest free-run juice, fermentation with indigenous yeasts, and extended aging on the lees without bâtonnage. The result is a white Burgundy of monumental scale, combining rich, exotic stone fruit and citrus oil notes with a searing, limestone-driven acidity and a saline minerality that easily rivals the Grand Crus of the Côte de Beaune.
