Domaine Guffens-Heynen's Le Chavigne, hailing from the steep, high-altitude limestone slopes of Pierreclos, is a legendary white Burgundy that single-handedly redefined the quality potential of the Mâconnais. When Jean-Marie Guffens and Maine Heynen acquired these challenging, stony plots in 1979, the site was largely overlooked. Guffens, with his iconoclastic philosophy, recognized the unique terroir and implemented meticulous vineyard management, including extremely low yields and harvesting in multiple passes ('tries') to capture perfect ripeness. Fermented with indigenous yeasts and aged on its fine lees, this wine exhibits a dramatic interplay of rich, concentrated fruit and a piercing, saline minerality that frequently rivals the Grand Crus of the Côte de Beaune in blind tastings.
