Crafted by the legendary rebel of Burgundy, Jean-Marie Guffens, this cuvée is a brilliant showcase of his irreverent wit and winemaking genius. The name 'Sauve Eaux' (often playfully rendered as 'Sauve-O') is a classic Guffens pun, phonetically translating to 'Save Water' (as in 'save water, drink wine') while cheekily nodding to grape varieties or stylistic profiles outside the rigid AOC framework. Released as a Vin de France, this bottling represents Guffens' ultimate freedom from bureaucratic appellation laws. Free to experiment, he applies the same obsessive, high-end white Burgundy techniques here as he does to his grandest crus: extremely low yields, natural yeast fermentations, and extended aging on the fine lees. The result is an extraordinarily tense, textured, and mineral-driven white wine that completely transcends its humble table-wine classification, delivering the power, complexity, and vibrant energy that Guffens-Heynen is famous for.

Established in 1979 by Belgian native Jean-Marie Guffens and his wife Lydie Heynen, Domaine Guffens-Heynen is located in the picturesque village of Vergisson in Burgundy's Mâconnais region. Widely regarded as a revolutionary visionary, Guffens transformed the reputation of southern Burgundy through uncompromising vineyard husbandry, rigorous manual selections involving multiple passes ('tries') during harvest, and precise, non-interventionist cellar practices. The domaine is world-renowned for crafting extraordinarily concentrated, mineral-rich, and age-worthy white Burgundies from iconic lieu-dits such as En Chavigne and La Roche in Pouilly-Fuissé and Mâcon-Pierreclos, regularly rivaling the finest Grand Crus of the Côte de Beaune.
