Hennessy VS (Very Special) is the modern successor to the famous Three Star Cognac, a classification system first created in 1865 by Maurice Hennessy. Crafted from a blend of approximately 40 different eaux-de-vie sourced primarily from the premier crus of the Cognac region, this iconic spirit represents the vibrant, robust heart of the Hennessy style. The grapes—predominantly Ugni Blanc—are harvested and fermented before undergoing traditional double-distillation in copper Charentais alembic stills. The resulting eaux-de-vie are aged for a minimum of two years in French oak casks from the Limousin forest. This aging process imparts a rich golden color, toasted oak aromas, and notes of brown sugar, citrus, and fresh grapes. Hennessy VS is celebrated globally not only as a neat pour but also as a versatile cornerstone of classic cocktail culture, bridging centuries of French distilling heritage with modern mixology.

Maison Hennessy blev grundlagt i 1765 ved Charente-flodens bredder af den irske officer Richard Hennessy og har lige siden defineret den moderne cognacs prestige og identitet. Huset henter primært Ugni Blanc-druer fra regionens fremmeste crus – herunder Grande Champagne, Petite Champagne, Borderies og Fins Bois. Her sikrer den kalkrige undergrund og det tempererede, maritime mikroklima grundvine med en markant, spændstig syre. Efter traditionel dobbeltdestillation på bærmen i klassiske Charentais-kobberkedler modner de unge eaux-de-vie på finkornede franske egetræsfade fra Tronçais og Limousin, fordelt mellem både fugtige og tørre lagringskældre. Den minutiøse blanding varetages i dag af Renaud Fillioux de Gironde og husets velrenommerede smagekomité som ottende generation i Fillioux-dynastiet.
