An extraordinary and exceptionally rare nectar, the Schieferterrassen Eiswein from Heymann-Löwenstein represents a triumph of nature and extreme viticulture. The term 'Schieferterrassen' pays homage to the dizzyingly steep, slate-terraced vineyards of Winningen in the Terrassenmosel. Eiswein can only be crafted in years when winter temperatures plunge to at least minus seven degrees Celsius, freezing the water inside the grapes on the vine. Harvested by hand in the freezing dark of early morning, these icy berries are pressed immediately to yield a highly concentrated, sweet juice. The resulting wine is a brilliant tension between luscious, honeyed sweetness and the piercing, electric acidity characteristic of Riesling grown on pure slate soils.
