Hailing from the wind-swept Orkney Islands, Highland Park is one of Scotland's most remote and historic distilleries, founded in 1798 by Magnus Eunson, a direct descendant of Viking settlers. This 25-Year-Old Single Malt, bottled in 2022, is a masterclass in patience and maritime maturation. The distillery's signature profile is shaped by the hand-cut peat of Hobbister Moor, packed with decomposed heather that imparts a sweet, floral, and aromatic smoke rather than the medicinal brine of Islay. Aged predominantly in sherry-seasoned European and American oak casks for a quarter of a century, this expression marries the intense spice of Spanish oak with the sweet vanilla of American oak, all enveloped in Highland Park's legendary gentle heathery peat smoke.
